Recipe from Beverly Hyndman - Corn Salad

1 can Shoe-peg Corn drained (this is white corn and if you have it from market all you need to do is cut it off the cob)
1/2 green bell pepper, finely chopped
2 Tbs. chopped pimentos (I often substitute 1/2 red bell pepper)
1 onion finely chopped
5 stalks celery finely chopped

Place above items in a bowl. Mix together the following ingredients for the dressing

1/4 cup white vinegar
1/2 cup corn oil
1/2 tsp powdered mustard
1 tsp salt
4 Tbs. sugar (or more to taste)
Black pepper to taste
